This is such an easy, delicious way to amp up fruit and get some protein in. You can make this for a fruit plate to take to a party, or use it as a “dressing” for a fruit salad. The dip blends up super quick—I didn’t find that I needed to soak the cashews beforehand for this, but if you have the time, go for it. It’ll just increase the creamy factor.

Vegan Strawberry Cashew Fruit Dip
Snack or Dessert | Vegan, Gluten-Free
Ready in: 20 min
Ingredients:
1 cup cashews
1 cup strawberries
1 teaspoon vanilla
2 tablespoons maple syrup
+ Whatever fruit you would like for dipping
Directions: Process all ingredients in a blender until smooth. Use 1 to 2 tablespoons of non-dairy milk if needed to get things moving in the blender. Pair with slices of fruit, or smaller fruit on toothpicks for dipping:
