I needed a quick dinner the other night and I hadn’t quite pulled myself together from being out of town over the weekend, so my fridge didn’t have much to offer up. And you know what just sounded really good? Pancakes. Because I do enjoy my breakfast for dinner from time to time.
But I was feeling a little guilty about the lack of veggies that my usual go-to pancake recipe delivers, so I figured, why not throw in some spinach? I was pretty sure I wouldn’t even be able to taste it, and I was right.
You honestly would never know it was there—hence, “Secret Spinach”—if it weren’t for the color. I’m totally doing this with these guys from here on out.
You need to try them, ASAP!

I love them with blueberry lavender cashew cream cheese …
Or try them with blueberry syrup…
…or plum syrup. 🙂
Also here are three more flavors of cashew cream cheese that are great on them…
