I’m always amazed at how much spinach you can blend into things without tasting it one single bit. Pancakes, for instance. (Seriously, you can’t taste it at all.) There’s a cup and a half of greens in this smoothie and it still tasted perfectly sweet and smooth.
Overall, this combo of ingredients turned out really nice because it didn’t end up tasting overly coconut-y or mango-like—the two just seemed to come together to create a new flavor that was really nice and mellow. I’m struggling with how to describe it, so go ahead and try it, then maybe you can tell me. 😉

1 cup chopped mango (frozen or fresh)
1/4 cup coconut milk
3/4 cup non-dairy milk (hemp, almond, rice, etc.)
1/3 cup cashews
1-1/2 cup loosely-packed spinach
4-6 ice cubes
Directions: Process all ingredients in a blender until smooth. Pour, sip, and enjoy!
