Peppermintmallows

There are two flavors that mean Christmas to me: eggnog and peppermint. So, peppermint marshmallows were kind of a must this month. I’ve put the base recipe in this post—perfect for popping on their own, or floating in hot chocolate—then I’ve also created a recipe for some chocolate-covered versions that are crazy good. A little too¬†popable. Also, having made so many marshmallows by this time, I decided to put together a list of marshmallow tips I think you’ll find helpful—learn from my trial and error. ūüôā Hope you like these! M Peppermintmallows Prep time: 1 hour¬†| Ready in: 6 hours, 35 min Ingredients: Cooking spray 3 packages unflavored gelatin ¬†1 cup light corn syrup and 1-1/2 cups granulated sugar (or 2 cups granulated sugar—see marshmallow tips for more details on this.) 1 teaspoon peppermint extract 1 cup powdered sugar Red food coloring Cooking tools: A candy thermometer Tin foil 12 x 9-inch jelly roll pan Directions: Line the inside of the jellyroll pan with tin foil, then you’ll want to coat it well with cooking …

Cranberry Cheer

Another mocktail for you—with some sugared holiday cheer! As always, I’d put money on the possibility that these things would be great with a shot of vodka…or perhaps gin on this one?? You’ll let me know? These have just the right amount of cranberry tang, and they look pretty stunning with those sugared cranberry garnish—those little guys are quite tasty, too. Enjoy! M Ingredients: 2 cups cranberries 2 cups sugar, divided 9 cups club soda or sparkling water Toothpicks or cocktail garnish spears (is that what you call those things??) Directions: Bring 1-1/2 cups of water and 1-1/2 cups of sugar to a boil in a medium saucepan. Cook until sugar is dissolved. Pour in cranberries, then remove from heat. Allow to sit for 30 minutes. To make sugared cranberries for garnishing: Using a slotted spoon, scoop out 3/4 to 1 cup of cranberries and place them on a cookie cooling rack with parchment paper below. Space them out so that they don’t dry clumped together. Let sit for 1 hour. Pour remaining 1/2 cup …

Jalapeno Radish Bites

Holiday dinners with my family almost always include red radishes, but my dad is the only one who ever eats them. He salts the heck out of them and pops ’em like grapes. Red radishes were also always present on my Grandma’s veggie trays, but those appeared at almost every dinner she served—she was an amazing cook so every¬†meal felt like a holiday. So, radishes have always been around, but I never liked them. Or, I should say, I never gave them a fair shot…they were among the massive list of foods I was too picky to eat when I was a kid, and it’s one of the few I refused to give in on as an adult. Until, that is, I made this¬†Avocado Toast with Watermelon Radish¬†last month. They had one cut open at the grocery store—an excellent marketing strategy—and¬†¬†honestly, I really just wanted to take a picture of them in a dish. Mini Apple Crumble Pies

Apple pie makes me…well, I think you can guess. (And the same goes for miniature-sized things!) It’s my favorite of ALL the pies and my go-to during the holidays—I am responsible for making it at Thanksgiving and Christmas in my family, while my dad makes almost literally everything else. (My sister, my mom, and I can usually be found giggling in the living room.) For this recipe, I wanted to create a version that would work at a pre-holiday, fall cocktail party—so I was thinking, tiny and fancy-looking. Enter: mini cheesecake tins! I love these because they are really easy to get the pies out of (there is a loose circle piece that sets inside each cup over a small hole in the bottom, so you can use your finger to push the little pies up), and the cylinder shape is quite classy.
