Cranberry Cheer

Another mocktail for you—with some sugared holiday cheer! As always, I’d put money on the possibility that these things would be great with a shot of vodka…or perhaps gin on this one?? You’ll let me know? These have just the right amount of cranberry tang, and they look pretty stunning with those sugared cranberry garnish—those little guys are quite tasty, too. Enjoy! M Ingredients: 2 cups cranberries 2 cups sugar, divided 9 cups club soda or sparkling water Toothpicks or cocktail garnish spears (is that what you call those things??) Directions: Bring 1-1/2 cups of water and 1-1/2 cups of sugar to a boil in a medium saucepan. Cook until sugar is dissolved. Pour in cranberries, then remove from heat. Allow to sit for 30 minutes. To make sugared cranberries for garnishing: Using a slotted spoon, scoop out 3/4 to 1 cup of cranberries and place them on a cookie cooling rack with parchment paper below. Pineapple-Ginger Elixir

I used to order something similar to this from a juice bar in Seattle all the time—often enough that I was able to guestimate on the ingredients so I could make it at home, too. This juice is really delicious, but is especially great when you feel like you’re coming down with a cold or flu. I wouldn’t go so far as to say it will cure you, but it’ll definitely take the edge off. I always feel better after I have a glassful. Be warned, this one is a little on the sweet side. For that reason, I use a whole lemon to give it a good balance of tartness, as well as a big piece of ginger. (I like to feel the burn when I’m a little under the weather.) If you can handle the ginger, do it—it’s great for you. But if not, do about half the amount. It’s still good for you, regardless of the dose size. Enjoy! Orange-Ginger Spritzer

Happy halfway through the week! This is just a mini post to share a refreshing little number I made the other night. I only had a tiny little bit of my favorite ginger ale left to go with my big ole bowl of popcorn, and that was not going to work. So, I pulled an orange out of the fridge, juiced it, and poured that and the ginger ale all over a glass of ice. Oh, it was good. Next time I’m going to try it with grapefruit juice—sort of like a salty dog that’s a little light on the salty. Mmm, I can already taste it… Cheers! (Clink.) Citrus Coolers

I did a recipe for Strawberry-Rhubarb Lemonade a few weeks ago that called for creating strawberry lemonade ice cubes and pouring a lightly sweetened soda over them. I loved that sipper so much that I decided to do something similar with citrus fruit. The best thing about this recipe is that you can have all the ingredients on-hand—both the ice cubes and soda store great for an extended amount of time—making it easy to pour one or a few anytime the mood strikes. This recipe makes a slightly sweet drink—which is the way I like them—but play with it a little to see what level of sweetness works for you. Need to adjust it? Just add or cut the amount of honey.
