Delicious New Stuff Ahead

Grain-Free Apple Pie Squares

So, apparently I have this thing with baking apple pie into different shapes. This time, I also sliced the apples a little differently…across the middle so that some of the finished squares would have a star in the middle. (CUTE!!) And, this will likely not come as a surprise to anyone, but apple pie is fantastic any way you slice or bake it. These ended up looking a little more messy than beautiful, but—and I think I’ve mentioned this before—I am a big fan of messes, just so long as they’re delicious messes. Hope you like these! M Grain-Free Apple Pie Squares  Yields: 16 to 20 squares  Prep time: 2o min | Bake time: 20 to 25 min | Ready in: 55 min Ingredients: Ingredients for Gluten-Free Pie Crust 4 Granny Smith apples 1/2 cup butter 1 cup brown sugar 1 tablespoon cinnamon Directions: Preheat oven to 350 degrees F. Curried Butternut Squash Lasagna Layers

I really like the idea of making a lasagna, but the truth is, if I did, I’d never eat it all. It’s just too much food. So, this recipe is kind of like a vegan lasagna that you can just layer up ingredients onto two plates, rather than have fill up an entire lasagna dish that could amount to eight servings. The curry is great with the squash—it creates a very warm, fall flavor—and the tofu and cashews blended with garlic make for a very creamy, ricotta-like sauce. Feel free to skip the noodles if you want something a little lighter, but I like the heartiness they add—perfect for nights when I’m a little on the ravenous side. Happy cooking! Treat Yo’ Self Two Thousand Fiftee-eeen! (You have to imagine Tom Haverford and Donna singing that, okay?) I was WAAAY late to the Parks and Rec party…like, didn’t-even-start-watching-it-until-it-the-series-was-over late. And while I was a little dissappointed in myself  (I’m usually pretty up-to-date, very familiar with, and generally all over any funny TV), after I’d watched the first episode, all I could be was excited…because, yeah, shame on me for taking so long, but also, lucky me—I had so much solid comedy ahead! Mini Apple Crumble Pies

Apple pie makes me…well, I think you can guess. (And the same goes for miniature-sized things!) It’s my favorite of ALL the pies and my go-to during the holidays—I am responsible for making it at Thanksgiving and Christmas in my family, while my dad makes almost literally everything else. (My sister, my mom, and I can usually be found giggling in the living room.) For this recipe, I wanted to create a version that would work at a pre-holiday, fall cocktail party—so I was thinking, tiny and fancy-looking. Enter: mini cheesecake tins! I love these because they are really easy to get the pies out of (there is a loose circle piece that sets inside each cup over a small hole in the bottom, so you can use your finger to push the little pies up), and the cylinder shape is quite classy.
